Glazed honey roast ham

Honey mustard glazed smoked ham

Ingredients

Smoked gammon joint raw 2.2 k

Carrots whole 3 each

White onion large 2 each

Thyme 1 large sprig

Star anise 3 each

Black peppercorns whole 6 each

Garlic cloves whole peeled 4 each

Coleman’s English mustard 4 teaspoon

Clear honey 2 teaspoon

Whole cloves 12each

Method

Place the gammon joint in a large pan and cover with cold water.

Place the gammon onto the stove and bring to the boil.

Remove the impurities from the top of the water.

Peel and roughly chop the carrots, onions then add to the water , then add the thyme , peeled garlic , peppercorns and star anise .

Bring to the boil then reduce to a simmer , cook until the gammon is warm in the middle.

Carefully remove from the water, allow to cool a little .

Preheat the oven to 180oc

Score across the skin of the gammon in a criss cross pattern.

Stud the squares of the skin with the cloves.

In a pan warm the honey and mustard to combine to form a glaze.

Brush the glaze onto the gammon .

Place in the oven removing from time to time to baste and glaze.

Cook the ham until golden.
